They should make a game with Peach as the hero(ine), but no Mario, Luigi or Bowser involved at all. The story could be about how they're off battling while some -other- threat comes to the Mushroom Kingdom, and Peach has to recruit friends (like Daisy!) to help her on an adventure herself.

Doki Doki Panic (reskined to become Super Mario 2, USA version) was fun, and brought many enemies (and Peach's veggie throws) to the official Mario games.
