Why would I care if "accessibility" was ever supposedly about disabled people or not? If that was ever the case(which I strongly doubt) then the ship set sail with the latest trend of arachnophobia modes in games with giant spiders, and evidently it wasn't the end of edgey games for anyone.
Hmm... I'd say treating this as an accessibility option is a good call. Some folks might have more limited tastes and comfort zones but aren't uptight and judgmental of others, and this as a trend would be a step to help them differentiate themselves from the tightwads.
Possibly a sign of the times, though I think live streaming has something to do with it. Twitch and YouTube can be fickle with what content they'll allow, so having options to play it safe helps with that.
I'll never say no to more options, and I don't think risque games will ever go anywhere.
