ADVENTURE TIME, and REGULAR SHOW! Both are on cartoon network. Also, I would recommend MAD TV if you are in tune with pop culture. It's like SNL for kids. That's not to say it's dumbed down, it actually has really great writing. It too, is on cartoon network.

watch the american crime drama show Bones. everyone that watches it ends up liking it a lot, and it has a crap ton of episodes. like 8 seasons worth.
Samurai Jack if you don't mind tracking it down, Phineas and Ferb for shows that are on television.

All the first ones that come to mind are anime, but if you don't mind that, Kyouran Kazoku Nikki, Shugo Chara, Cromartie High School...
And actually, I heartily recommend Yu-Gi-Oh: the Abrdiged Series and TeamFourStar's Dragon Ball Z Abridged. If you haven't, check them out on Youtube.

I would say MLP, but given that you said Mindless, and the amount of pointlessly intilectual things that are said in MLP, I would say either Adventure Time or The Regular Show. Both seem mind-numbingly simple, and adventure time seems light-hearted, Regular Show is just on drugs.

Mystery Science Theater 3000
Lucky Star
The Melancholy of Haruhi Suzumiya
Also, another idea:

You should check out the venture brothers and drawn together.
As an artist, you should have some appreciation for the drawing style and production values, the humor is amazingly good fun, if very low brow, and the shows become very fast paced.
Trust me, I've worked out with these.

Hetalia is actually an extremely "mindful" cartoon. You have to really know your 19th century history and the interactions between the various nations to get the most of out it. It's very cerebral.
I suggest the early seasons of Spongebob Squarepants and any and all Adventure Time.
